Vegan potato cheese, the best thing you can put on pizza

Whatever you eat, I can eat vegan! It took me quite some time to understand that. And some trial and error too.

But did I say vegan potato cheese?

When I decided to ditch dairy, I thought the hardest thing was going to be life without pizza. I know some people are fine with ordering regular pizza without the cheese on top but to me, a pizza without cheese is simply not pizza.

I tried many things, from store bought vegan cheese to making my own vegan mozzarella or sprinkling my pizza with vegan parm and so far, what I think works best for pizza (and is also one of the quickest options) is this potato cheese. It remains sort of gooey AND browns in the oven, which I think is super important for pizza.

How do you put vegan potato cheese on a pizza?

Ingredients:

– 200g potato (peeled)
– 3 tbsp. nutritional yeast (make sure you pick a brand you like)
– 10cl plant based cream
– 2 1/2 tbsp. olive oil
– 1tsp. garlic powder
– 1 tsp. salt

Instructions

First of all, know you may need to adjust the quantities depending on how watery you potatoes are and on how strong the taste of your nutritional yeast is but in the end it is not that important. Start by cooking the potato until really soft. I usually cut mine into small bits and pop them into the microwave for 3 to 4 minutes. Once it’s done, mash until smooth and combine with the other ingredients. Top your pizza with that mixture, preferably directly on the tomato sauce, and cook your pizza like you normally would.
