Vegan French style Shepherd’s pie (hachis Parmentier)

Ok, it’s officially cold now and cold weather calls for hearty meals don’t they?

Shepherd’s pie or hachis Parmentier, as we call it in France, is perfect for the winter and it’s one of my teenage years favourites. Normally the French make that with beef or duck but hey, it’s not too cool to kill animals, so I’ve been using lentils and I think I’ve perfected the recipe over the years.
I tend to use tinned lentils because it’s a lot quicker but the recipe also works with dry lentils, provided you precook them. All in all, it’s a very simple dish and you can easily change the ingredients to make it fancier (say, Christmas dinner fancy with chestnut and porcini for example)
Ingredients:
– 250g cooked brown lentils
– 2 portobello mushrooms (chopped)
– 150g carrots (diced)
– 2 celery stalks (diced)
– 1 large onion (chopped)
– 3 garlic cloves (minced)
– 1 bayleaf
– 1 glass of (vegan) red wine, you can check barnivore or vin-vegetalien for that
– 2 tbsp of soy sauce
– Thyme, salt, pepper, olive oil
– 500g potatoes (peeled and chopped)
– 10cl oat cream (the oatly mat fraiche does wonders here)
– nutmeg (to taste)
– breadcrumbs (optional)
Instructions:
Bring a pot of salted water to a boil and add your potatoes. Cook until tender and drain (I usually keep about 1 cm of the cooking water at the bottom of the pot). Mash the potatoes in that same pot with the remaining water  and add the nutmeg and oat cream.
While the potatoes are cooking, sauté your onion in a splash of oil then add the garlic, carrots, celery, portobello, thyme and bayleaf. Cook until the water from the mushroom has disappeared. Add the wine and soy sauce, stir and then add then drained lentils, salt if necessary and pepper. Cook over medium-low heat until the carrots are soft and the mixture has dried out.
Preheat oven to 200°C. Spread the lentil mixture into an oiled casserole dish, top with the mashed potatoes and sprinkle with breadcrumbs. Bake for 30 mins or until golden brown.

Le hachis Parmentier est le plat idéal en ces circonstances et en plus c’était l’un de mes préférés quand j’étais ado. Normalement, on le cuisine avec du boeuf ou du canard mais bon, c’est pas super sympa de tuer des animaux donc moi, j’y mets des lentilles et je pense avoir perfectionné ma recette avec les années.
J’ai tendance à prendre des lentilles en boite car c’est plus rapide mais la recette marche aussi avec des lentilles sèches à condition de les avoir précuites. Au final, c’est un plat très simple et on peut facilement en changer les ingrédients pour le pimper (avec par exemple des châtaignes et des bolets pour en faire un plat de Noel).
Ingrédients:
– 250g de lentilles cuites
– 2 champignons portobello (émincés)
– 150g de carottes (coupées en dés)
– 2 branches de céleri (coupées en dés)
– 1 gros oignon (émincé)
– 3 gousses d’ail (émincées)
– 1 feuille de laurier
– 1 verre de vin rouge (vegan), allez voir sur  barnivore ou vin-vegetalien pour ça
– 2 cas. de sauce soja
– Thym, sel, poivre, huile d’olive
– 500g de pommes de terre
– 10cl de crème d’avoine (j’ai utilisé la crème fraiche patly, c’était de la folie)
– muscade (selon gout)
– chapelure (optionnel)
Recette:
Dans une casserole, faire bouillir de l’eau salée et y faire cuire les pommes de terre jusqu’à ce qu’elles soient fondantes et les égoutter (je garde 1cm d’eau de cuisson au fond de la casserole). Ecraser les pommes de terre avec le fond d’eau et incorporer la crème d’avoine et la muscade.
Pendant que les pommes de terre cuisent, faire revenir l’oignon dans un filet d’huile puis ajouter l’ail, les carottes, le céleri, les champignons, le thym et le laurier. Laisser cuire jusqu’à ce que le jus du champignon ait disparu. Ajouter le vin et la sauce soja, mélanger oui incorporer les lentilles égouttées, un peu de sel si besoin et du poivre. Laisser mijoter jusqu’à ce que les carottes soient molles et que le jus se soit évaporé.
Préchauffer le four à 200°C. Verser les lentilles dans un plat à four préalablement huilé puis étaler la purée par dessus. Saupoudrer de chapelure et enfourner pendant 30 min ou jusqu’à ce que le dessus soit doré.
