A Merry vegan Christmas: The Chestnut Yule log

You just had the main course, now it’s time for something sweet! In France, the traditional Christmas dessert is the Yule log. It doesn’t matter if it’s cake, mousse, ice cream or actual wood, as long as it’s a log that is being served. The most traditional flavour is definitely chestnut and it also happen to be my favourite. So it’s only natural for me to learn how to make a vegan version of it, don’t you think?

I used to be scared of cake rolls, thinking you had to be a pastry chef to master the skill. Turns out it’s only a matter of patience! I think anyone can succeed at making this delicious cake.

Ingredients:

for the sponge cake:
-250g of all purpose flour
-120g of sugar
-250ml of almond milk
-2 tbsp. of almond butter
-1 vanilla pod (use the seeds)
-1/2 pack of baking powder
-1 tbsp. of apple cider vinegar

for the chesnut mousse
-200g of chesnut spread
-1 tbsp. of rhum
-aquafaba from 1 can of chickpeas
-1 tbsp. potato starch
-2g of agar


Instructions:

Preheat oven to 180°C and place a baking sheet on your baking tray. In a mixing bowl, combine flour, sugar, baking powder, vanilla and almond butter then add the almond milk progressively. Mix until smooth and add the apple cider vinegar. Pour mixture on the tray and spread evenly. Bake for 15 minutes. Remove from oven and let the sponge cake cool down to room temperature. Humidify two kitchen towels and place the cake directly on top of one on a flat surface and cover with the other. Let sit for an hour at room temperature. Meanwhile, whip the aquafaba until foamy, but not firm and mix with the chesnut spread, agar, potato starch and rum. Transfer to a pot and cook over medium heat and stir until the mixture starts to thicken and reaches the consistency of a paste. Let it cool down then spread all over the sponge cake (don’t forget to remove the top towel). Ready, set, roll! Delicately. Cut the ends and decorate with whatever you have: confectioner’s sugar, cocoa power, nuts, berries… anything you can think of! Store in the fridge for at least an hour before you serve

Vous avez eu droit au plat principal, voici maintenant le dessert! En France, on mange de la bûche. Qu’importe si elle est en gâteau, en mousse, en glace ou ên bois, tant que c’est une bûche. La plus classique est très certainement la buche aux marrons et il se trouve aussi que c’est ma préférée. C’est donc tout naturellement que j’ai appris à en faire une version vegan.

Les gâteaux roulés me faisaient très peur et je croyais qu’il fallait être chef pâtissier pour y arriver mais en fait c’est juste une histoire de patience! N’importe qui peut réussir à faire ce gâteau délicieux

Ingrédients:

pour la génoise:
-250g de farine
-120g de sucre
-250ml de lait d’amande
-2 càs. de purée d’amande
-1 gousse de vanille (n’utiliser que les grains)
-1/2 paquet de levure chimique
-1 càs de vinaigre de cidre

Pour la mousse de marrons
-200g de crème de marrons
-1 càs de rhum
-le jus d’une boite de pois chiches
-1 càs de fécule de pomme de terre
-2g d’agar-agar

Recette:

Préchauffer le four à 180°C et placer une feuille de papier sulfurisé sur une palque de cuisson. Dans un saladier, mélanger la farine, le sucre, la levure, la vanille et le beurre d’amande puis verser le lait d’amande progressivement. Mélanger jusqu’à ce que la pâte soit lisse puis y verser le vinaigre de cidre. Verser le mélange sur la plaque et étaler uniformément. Enfourner pendant 15 minutes puis laisser la génoise refroidir. Humidifier deux torchons et transferer la génoise sur l’un et la recouvrir à l’aide du second. Laisser reposer ainsi pendant 1h à temperature ambiante. Pendant ce temps, battre le jus de pois chiche jusqu’à l’obtention d’une mousse encore liquide et ajouter la crème de marrons, l’agar, le rhum et la fécule. Transvaser dans une casserole et faire cuire à feu moyen tout en fouettant jusqu’à ce que le mélange épaississe et ait la consistance d’une pâte à tartiner. Laisser refroidir puis étaler sur la génoise (sans oublier de retirer la serviette du dessus). Prêts, feu, roulez! Délicatement. Couper les extrémités et décorer avec ce que vous avez sous la main: sucre glace, cacao, noisettes… Mettre au frigo pendant au moins une heure avant de servir.
